Gochujang Chicken with Rice

INGREDIENTS
Vegetables & Aromatics
1 medium Onion
5-6 cloves Garlic
Small piece of Ginger
2x Green Onions
Sauce
1tsp White Sugar
2tbsp Gochujang
2tbsp Soy Sauce
1tbsp Oyster Sauce
1tbsp Mirin
Chicken
500g / 1.1lb Minced Chicken
For Cooking
2tbsp Cooking Oil (e.g. Vegetable, Canola, Sunflower etc.)
1tsp Sesame Oil
Salt
METHODS
Step 1: Prepare the vegetables & aromatics
Finely mince the onion, garlic. Set aside in a bowl
Thinly slice the green onion. Add to a separate bowl
Step 2: Make the Sauce
Add all sauce ingredients to a bowl
Mix to combine and set aside
Step 3: Mince the chicken (if not using store bought)
Mince chicken using a knife or processor to your desired consistency
Add to a bowl and set aside
Step 4: Cook the stir-fry
Heat a wok or pan over high heat
Add 2tbsp cooking oil
Add the chicken. Spread out in a single layer to maximise surface contact. Cook undisturbed for 1-2 minutes, or until seared
Add the minced onion, garlic & ginger
Cook, breaking up the chicken until the excess liquid has evaporated
Add the sauce. Cook, stirring constantly, until the excess liquid has evaporated and slightly caramelised
Turn the heat off. Add the chopped spring onion & 1tsp sesame oil. Mix to combine
Taste for seasoning and add salt to taste
Step 5: Cook the rice
Wash 2 cups of rice 3-4 times and drain
Add the washed rice to a pot or rice cooker. Add enough water to cover the surface of the rice by 1-2cm / 0.4-0.8in
If using a rice cooker, follow the manufacturers instructions
If using a pot, bring to a boil over high heat. Once boiling, cook for 10 minutes with the lid on. Turn the heat off, but leave the lid on for a further 10 minutes
Fluff the rice with a spatula to release excess steam
Step 6: Storage & serving
Evenly distribute the rice and chicken between 4 containers
Allow to cool before storing in the fridge for up to one week
To serve, microwave to reheat and enjoy!
